When it comes to pizza, enthusiasts know what they like. For many, the only pizza worth considering is made in a commercial wood fired pizza oven. Yet, the average person may have only the remotest idea of what a wood-fired pizza oven is.

It should be no surprise to anyone that a wood-fired pizza oven utilizes wood to cook a pizza. However, how many envision it and the reality are often quite different. An oven using wood does not actually use the wood to cook the pizza. Instead, it does two things:

2.It heats the walls, tiles and dome of the oven to white-hot

The process does not occur quickly. It does not take seconds but hours for it to reach the heat required to cook a pizza in mere minutes. It will retain these interior high temperatures for days.
After making it possible for the oven to reach the desired degrees, the wood is no longer necessary. Depending upon the oven type, it may be pushed to the back or removed from the oven altogether.
